Here’s a quick and easy skillet dinner for the summer using all that fresh garden bounty~ Summer Squash :) You’ll have dinner ready in 30 minutes flat! And…this recipe fits into the GoCleanse protocol if you’re on an 11 or 30 day cleanse.

Summer Squash Chicken

Serves 6
Prep Time: 30 minutes


2 TB olive oil

½ white onion, thinly sliced

9 boneless, skinless chicken thighs

6-8 thinly sliced summer squash

1 cup carrots, peeled, sliced, & quartered

1 cup celery, sliced

½ cup chicken broth

1 tsp red pepper flakes

1 tsp garlic powder

½ tsp white pepper

2 TB chopped parsley


In large skillet, heat 1 tablespoon of olive oil on med/high~ add onion and chicken. Sautee until brown on both sides, pull out of pan and set aside. Add second tablespoon of olive oil on medium, add summer squash, carrots, & celery~ sautee for about 2 minutes. Add chicken back into pan. Add chicken broth, red pepper flakes, garlic powder, white pepper and chopped parsley. Cover with lid and let cook for about 7 minutes on a low to medium simmer.
