How about a change-up to your good old-fashioned deviled eggs?  Adding avocado not only boosts the flavor of a classic recipe, but you’ll reap ALL the nutritional benefits as well. Avocados are loaded with vitamin B5, B6, C, E, K, folate and have more potassium than a banana! Don’t forget the heart healthy monounsaturated fat either~all in all, it’s a WIN-WIN! Plus, this recipe will help you use up all those leftover eggs from the Easter Bunny. These babies are more fun to eat than egg-salad. Enjoy!

Avocado Deviled Eggs

Yield 24 eggs

Ingredients:

1 dozen hard boiled eggs

1 large avocado

1 TB lemon juice

1 tsp lime juice

1 clove minced garlic

½ tsp sea salt

¼ tsp black pepper

cilantro & cayenne pepper to garnish

Directions:

Slice hard boiled eggs in half lengthwise. Place yolks in medium sized bowl. Scoop out avocado and, using a fork, mash in bowl with yolks. Add lemon and lime juice, garlic, and salt & pepper, continue to mix until fully combined.
With a spoon or small scooper, add filling back into egg white halves. Lightly sprinkle with cayenne pepper and garnish with sprig of cilantro.
FUN RECIPE OPTIONS: Add chopped jalapeno!! OR…get on the turmeric band-wagon~ curry is fun too! Feel free to experiment and let me know what you did to change things up–always fun to experiment in the kitchen~LOVE to get your comments :) NN
