Yesterday, after a beach walk with my friend Lauren, she invited me in to try something she made with her brand new Vitamix–homemade nut butter! It was fantastic~ she used a few peanuts, almonds, walnuts pecans, and added a little honey. Today, I gave it a go in my own Vitamix and tweaked it slightly. After grinding it up in the blender, it comes out warm and heavenly. Perfect on apples or just about anything else and it couldn’t be easier to make~ yum! Thanks Lauren~ you know I love to steal your ideas :) Here’s my version:

Triple Nut Butter

Ingredients:

1/2 cup walnut halves

1/2 cup pecan halves

1/2 almonds

1 tsp honey

A sprinkle of cinnamon

Directions:

Pour nuts into Vitamix or food processor, start on a low speed for about 30 seconds. Scrape sides of blender, then start again, upping the speed. Keep doing this process until almost blended. Add honey and cinnamon. Blend until completely mixed. Serve immediately while it’s warm–on apples, pears, celery, crackers, or bread. Store in airtight jar in fridge. Yield about 1 cup. You can make larger batches, but you may want to experiment with a small amount to start. I would LOVE to hear your combinations–try it at home and leave post your comments here.
