Greek Salad (serves 6)

Ingredients:
2 cucumbers, quartered & cut in chunks
1 basket cherry tomatoes, halved
1 large red bell pepper, diced
½ red onion, diced
¼ cup parsley, chopped
2 cloves garlic, minced
1 can black or Greek olives, pitted
3-4 TB extra virgin olive oil
¼ cup seasoned rice vinegar
sea salt & black pepper to taste
Optional:  feta cheese, crumbled

Directions:
Prep veggies and combine along with olives in a large bowl. Add olive oil, vinegar, salt & pepper. You may serve immediately or refrigerate. If desired, top with crumbled feta cheese.
