(I adapted this recipe from favorite apple pie recipe from my friend Susie Baum)
- 6-7 medium Granny Smith Apples
- 1 stick butter
- 1 cup sugar
- ¾ cup of gluten free flour (I like King Arthur brand)
- ½ tsp. ground cinnamon
- 1 gluten free piecrust (Whole Foods makes the best one. You’ll find it in the frozen section.)
Preheat oven to 350 degrees
First, you’ll need to take the piecrust out of the freezer to defrost.
Once it defrosts, I like to transfer the piecrust into a glass pie plate. It looks so much better. Then, peel, core and slice the apples and put them in a bowl with ½ c. of the sugar and the cinnamon, tossing to coat.
In another bowl, combine flour, the rest of the sugar and the butter cut into little pieces. I have an old-fashioned pastry blender, but if you don’t have one, you can blend the ingredients with 2 knives or a fork. Blend until it looks mealy.
Pour apples into crust, and cover with flour mixture.
Bake in the middle rack of your oven for 1 hour at 350 degrees.
Serve with vanilla ice cream and butterscotch
